Healthy Blackbean Brownie

Do you children love brownies and always wanting something sweet? Give this healthy Black Bean Brownie a try instead!

This recipe has been shared by Jordy, our centre cook at BestStart Halswell Junction. 

Ingredients:

  • 350gm Black beans & chickpeas
  • 60g coconut oil
  • 100gm dark chocolate (70% +)
  • 3 eggs
  • 20gm cocoa powder
  • 50gm coconut sugar
  • 1tsp baking powder
  • 50g frozen raspberries or walnuts

Method:

  • Preheat oven to 160
  • Place beans, chickpeas, coconutoil, eggs, cocoa, melted chocolate and coconut sugar into a food processor orhigh-speed blender and blend for 3 minutes or until smooth.
  • Then add baking powder andfrozen fruit or walnuts if using and pulse until all incorporated.
  • Transfer mixture into preparedslice tin and smoother down with an offset spatula
  • Bake for 25mins or until justcooked through
  • Once cooled cut into desiredsize, these freeze well and only take a cooked of minutes to defrost on thebench or in a lunchbox. I like this best the next day from the fridge, they geta moreish fudgy texture inside
