Chia seed crackers

Looking for a healthy cracker?

These are nutty, salty, loaded with healthy fats and fibre and best of all, crunchy!

Ingredients:

  • ½ cup Pumpkin seeds
  • ½ cup Sunflower seeds
  • ¼ cup Sesame seeds
  • ¼ cup Chia seeds
  • Pinch Salt
  • 1 cup water

Method

  • Place pumpkin seeds, sunflower seeds and sesame seeds in a food processor and blend until they resemble coarse breadcrumbsPlace in a bowl with chia seeds, salt and water and mix
  • Leave covered for approximately 30 minutes
  • Heat oven to 160°C
  • Spread mixture out on a greased oven tray to approximately 5mm thick
  • Score with a knife to make breaking the crackers easier and more uniform or leave unscored if you like uneven crackers
  • Bake for approximately 1 ½ hours or until crisp and golden brown
  • Remove from oven and allow to cool on the tray
  • Break apart and store in an airtight container

These crackers go well with a delicious dip. Try this Guacamole that can be whipped up in minutes and tastes great too.

Ingredients:

  • 2 ripe avocados
  • ¼ cup lemon/lime juice
  • 1 tbsp chopped fresh chilli (optional)
  • 1⁄3 cup chopped fresh coriander (optional)pinch salt

Method

  • Scoop out the avocado flesh and place in a bowl
  • Mash with a fork until you reach the consistency you like
  • Mix through the remaining ingredients
  • Refrigerate in an airtight container until ready to serve
