At BestStart Queenstown in the Manata ruma we have been strengthening our knowledge around sustainability, with a focus on gardening. Each year, Mitre10 very kindly donate seeds and seedlings to our tamariki as part of their 'Growing Kiwi Kids' garden programme that we participate in. We had a seed potato in our box this year, so we quickly got to work preparing the ground with compostable materials. We planted the potato, and mounded the dirt as required. We watered and tended to the potatoes as we patiently watched them grow. Once the flowers had died back, we dug them up and managed to grow three huge trays just from one baby seed potato! We cooked these up, the new potatoes with mint and parsley from our own veggie and herb garden, and the bigger ones we made into fritters with carrot and herbs. We enjoyed these during our afternoon picnic kai, yummy!! Such great mahi from our tamariki, watching kai grow from seed to spoon!!
