  • 350gm Black beans & chickpeas
  • 60g coconut oil
  • 100gm dark chocolate (70% +)
  • 3 eggs
  • 20gm cocoa powder
  • 50gm coconut sugar
  • 1tsp baking powder
  • 50g frozen raspberries or walnuts

  • Preheat oven to 160
  • Place beans, chickpeas, coconut oil, eggs, cocoa, melted chocolate and coconut sugar into a food processor or high-speed blender and blend for 3 minutes or until smooth.
  • Then add baking powder and frozen fruit or walnuts if using and pulse until all incorporated.
  • Transfer mixture into prepared slice tin and smoother down with an offset spatula
  • Bake for 25mins or until just cooked through
  • Once cooled cut into desired size, these freeze well and only take a cooked of minutes to defrost on the bench or in a lunchbox. I like this best the next day from the fridge, they get a moreish fudgy texture inside
