Kumara Brownies

Kumara Brownies

An occasional treat to fit in with our Healthy Heart menu. It is fudgy and delicious and feels like a treat!

You will need:
  • 2 cups pureed kumara
  • 3/4 cup flour
  • 3/4 cup wholemeal flour
  • 4 eggs
  • 200 g dates
  • 4 tbs cocoa
  • 70 ml vegetable oil
  • 1 tsp baking powder
How to make it:
  1. Blitz all ingredients in the food processor.
  2. Pour brownie mixture into a prepared cake tin.
  3. Bake at 200 degrees Celsius for 20 min - 30 minutes or until just firm.
  4. Set aside to cool before cutting
  5. Serve brownies with some seasonal berries and dusted with cocoa.
