Kumara Brownies
An occasional treat to fit in with our Healthy Heart menu. It is fudgy and delicious and feels like a treat!
You will need:
- 2 cups pureed kumara
- 3/4 cup flour
- 3/4 cup wholemeal flour
- 4 eggs
- 200 g dates
- 4 tbs cocoa
- 70 ml vegetable oil
- 1 tsp baking powder
How to make it:
- Blitz all ingredients in the food processor.
- Pour brownie mixture into a prepared cake tin.
- Bake at 200 degrees Celsius for 20 min - 30 minutes or until just firm.
- Set aside to cool before cutting
- Serve brownies with some seasonal berries and dusted with cocoa.
