Making Delicious Āporo Jam

At BestStart Balclutha we have vegetable gardens and fruit trees. We love to prepare and eat our produce, share it with whānau and our wider community.

Lately our tamariki have been busy collecting the āporo as they ripen. On this day Lisa told me she was going to make āporo jam. I told her about the āporo jelly my mum used to make, she said, "I can't make jelly!" So, jam it was! 

Ngā tamariki quickly washed their ringa ringa and were ready to help. They peeled āporo and added the extra ingredients (in the second batch they added lime and lemon).

Once the jam was cooked, I had a taste test and could tell Lisa that they had actually made āporo jelly, just like my mum used to make. ❤️

The jelly/jam tasted amazing on Jude's beautiful scones she made for afternoon tea.

The recipe: 1 cup of fruit (you can use tin fruit, drain overnight) 1 cup of Chelsea jam setting sugar. Microwave two minutes, stir, repeat three times. Warm jar before putting jam in.
