Yummy dairy and egg free banana loaf recipe

Here at BestStart Halswell Junction we support many families who have children with food allergies or intolerances.

We ensure we provide the children with the same foods but of course safe for everyone.

We discovered an amazingly yummy dairy and egg free (to be gluten free just replace the flour) banana loaf recipe recently that we thought we would share as it went down a treat with our children having seconds and thirds!! Even the teachers snuck a piece each – it was so light, fluffy and truly delicious!

Ingredients:

¾ C Chickpea Brine

¾ C White Sugar

½ C Oil

2 Ripe Bananas

1t Baking Soda

2T Dairy Free Milk Substitute

2C Plain Flour

Pinch Salt

1t Baking Powder

Instructions:

1/     Place the chickpea brine and sugar in a mixing bowl and beat well for 2-3 mins

2/     Add the oil gradually while beating quickly

3/     Mash the bananas and add to the mixture

4/     Heat the milk and add the baking soda

5/     Add the flour, baking powder, salt and milk mix together and combine with chickpea mixture – be careful not to overmix

6/     Place in a greased or lined baking tin and bake at 170 degrees until cooked through

Store in an airtight container or freeze in portions.
